Rheology on the Way from Dilute to Concentrated Emulsions
نویسنده
چکیده
The short review presents the analysis of the consecutive evolution of the rheology of emulsions starting from dilute systems (behavior of an individual liquid droplet in a continuous liquid phase) till the highly concentrated emulsions, in which droplets loose their spherical shape and become polygons. Along with the increase of the internal phase concentration, this is the transition from a simple Newtonian fluid via non-Newtonian fluid and up to a plastic medium demonstrating solid-like behavior at low shear stresses, yield stress threshold and non-Newtonian time-dependent properties. The special features of the emulsions rheology are related to the droplet deformation, orientation in flow, break-up and interdroplet interaction in concentrated emulsions. The similarities and differences in the rheology of suspensions and emulsions are discussed. Copyright © 2010 Praise Worthy Prize S.r.l. All rights reserved.

Towards local rheology of emulsions under Couette flow using Dynamic Light Scattering.
We present local velocity measurements in emulsions under shear using heterodyne Dynamic Light Scattering. Two emulsions are studied: a dilute system of volume fraction phi = 20% and a concentrated system with phi = 75%. Velocity profiles in both systems clearly show the presence of wall slip. We investigate the evolution of slip velocities as a function of shear stress and discuss the validity...
متن کامل(de)stabilize an oil-in-water emulsion at neutral or acidic pH? A review
This paper reviews the effects of the addition of flaxseed gum on the physicochemical properties of whey protein-stabilized, oil-in-water emulsions at neutral and acidic pH as investigated by light scattering and rheology under dilute and concentrated conditions. At pH 7.0, measurements performed in the dilute system showed no changes in charge or size of the droplets however, in the concentrat...
متن کاملLinear and nonlinear rheology of dense emulsions across the glass and the jamming regimes.
We discuss the linear and nonlinear rheology of concentrated microscale emulsions, amorphous disordered solids composed of repulsive and deformable soft colloidal spheres. Based on recent results from simulation and theory, we derive quantitative predictions for the dependences of the elastic shear modulus and the yield stress on the droplet volume fraction. The remarkable agreement with experi...
متن کاملRheology of Food Dispersions
We review the viscous and viscoelastic behaviours of concentrated food emulsions and plant food suspensions. Special attention has been given to the influence that food processing exerts on the rheological characteristics of the abovementioned foodstuffs.
متن کاملOsmotic Stabilisation of Concentrated Emulsions and Foams
In the absence of coalescence, coarsening of emulsions (and foams) is controlled by molecular diffusion of the dispersed phase species from one emulsion droplet (or foam bubble) to another. Previous studies of dilute emulsions have shown how the osmotic pressure of a trapped species within droplets can overcome the Laplace pressure differences that drive coarsening, and " osmotically stabilise ...
